Hi all! I wanted to take a moment to introduce myself. :) I am a newly vegan southern girl, a mom to 2 amazing kiddos, and the wife of my soul mate. About a year and a half ago, I became a vegetarian. I was inspired by Kris Carr and Kathy Freston, but it was Alicia's Kind Life that made me say "Yes! That's me!". I was vegetarian for about a year (loved it and had plans to lean vegan), and then (oh-so sadly) reintroduced meat into my diet a few months ago - per doctors recommendation. I am so disgusted with myself for doing that - for not thinking for myself and being easily persuaded. Well, long story short, my Kind spirit couldn't take it any longer, and I have not only removed meat, but gone cold-turkey vegan. :) I could not be happier. It has been about a week or so, and I have never felt better (mentally, physically, and spiritually).
The Kind recipes have been a staple in my kitchen since the first taste, and I have been browsing this community ever since my initial reading of The Kind Diet - I have read it more times than I can count, at this point. I decided to join and speak up because I have so enjoyed reading your journeys, suggestions, and such. I look forward to getting to know you more.
