The kind diet and kids?..

Hello,
I love the kind diet book and it has been my guide to transition from vegetarian to vegan. My concern is that I am great with the superhero diet but my 3 and 6 yr old..... Not so much. How do I follow that kind of diet with two little ones?.... I can't keep making separate meals. I am getting so burnt out. Please help!

I am in a similar boat - with a 2 and 4 y/o. In the past, I prepared SAD dinners (protein, starch, and veggie). To try and transition, I am making my superhero dish as the veggie, serving the superhero whole grain as the starch, and adding in their (comfortable) additional protein. We have a *you have to at least try your veggies* rule. If they truly have a distaste for the vegan dish I prepare, I will serve them raw celery or carrots (a go-to in our house).

I am hoping to eventually remove their additional protein without much ado. We shall see. LOL One good thing is that both of my kiddos like nuts. I just bite almonds in half for my 2 y/o. (so I don't worry about choking) and he will gobble them up.

**BTW - I have added a little Earth Balance to the grains to help. I am going to try adding some nutritional yeast to see if they like that, too.
