Hi all! Thanks to a push from Alicia's book, I've been a vegetarian for almost 3 years, and gave up cow's milk long before that. Recently, I decided to give up all dairy and eat a vegan diet most of the time (I still use free range eggs from time to time). For me, the decision to become vegetarian was a moral one, but I've noticed the health benefits SO much along my journey. I even persuaded my meat-eating husband to go veggie about 2 years ago when he realized how delicious all the food I was making really was! We have a 3-year-old son and a 4-month-old daughter who will be brought up vegetarian (despite lots of backlash from family). When they are old enough, they can make an informed decision about whether to eat meat or not - but I will be heartbroken if they do!
Any other Burlington moms out there?? What a great resource this is! Looking forward to being an active part of this online community.
Nice to hear from you, Erin! :) While most who decide to becomes vegans or vegetarians do so for ethical and moral reasons, it is undeniable that a plant-based diet makes you glow. When you see unusually ethereal-looking people, it's quite possible they're vegetarians ;).
