Hi Everyone! After watching a few documentaries on Netflix, it was just the push I needed to change our diet. My kids and I are on board with eating vegan, but my hubby is a harder sell. I told him he can eat what he wants for his lunches while at work, but since I do the shopping and cooking I'm only making vegan food. I think in his mind, we'll be eating tofu and brown rice for every single meal. Can anyone point me in the direction of a good cookbook that's aimed at beginners? Some of the recipes I've found use grains and ingredients I've never heard of before, and I want this transition to go smoothly, and hopefully convince my hubby it's easy.
