Transitioning kids to a meatless whole foods diet

I need help! I have two children ages 6 and 3. Our family decided to pursue a vegetarian diet three years ago after reading The Kind Life, which was a birthday gift (probably the best gift ever :-). Since then, I've done a lot of research on diet and how it affects health (China Study, Forks Over Knives, etc.). I want to move my family to a more whole foods plant-based type of diet - taking it one step further by getting rid of processed food. This is easy enough for my husband and I, but for my two VERY picky kids, this is proving quite difficult. In our attempts to go vegetarian, we tried replacing many of our meaty entrees with vegetarian substitutes - meatless chicken nuggets, bacon, sausage, etc. While these are an improvement from the real meaty deal, they are still processed foods that I'd like to start steering away from. So I guess my question is - is there anyone out there who has done this with super picky kids?!? I have one child in particular that has a sensory processing disorder when it comes to texture - so foods with certain consistencies are out - like yogurt, oatmeal, mashed potatoes. I'd love any tips, recipes, resources you might have for me.
