Banana Bran Muffins

These muffins are so delicious! I took a non-vegan recipe and changed the ingredients to be healthier and of course, vegan. I had a hard time not eating all of the batter while the muffins were baking…hope you enjoy them as much as i did!

Ingredients

  • Bran Cereal 2 cup
  • Flour (I combined rice and whole wheat) 1.25 cup
  • Baking Powder 1 tbsp
  • Sea Salt 0.5 tsp
  • Cinnamon (I used closer to 1 tbsp...I love cinnnamon!) 1 tsp
  • Flax Seeds
  • ground 2 tbsp
  • Agave Nectar 0.25 cup
  • Brown Rice Syrup 0.25 cup
  • Water 4 tbsp
  • Non-Dairy Milk (I use Rice Dream) 1 cup
  • Ripe Bananas 3 na
  • Applesauce OR Oil 0.25 cup
  • Cranberries 0.25 cup
  • Walnuts
  • Chopped 0.25 cup

Directions

  1. Preheat oven to 375
  2. Combine cereal
  3. flour
  4. baking powder
  5. salt
  6. and cinnamon in a large bowl
  7. Mix the flax and water in a small bowl
  8. as an egg substitute - set aside
  9. In a medium bowl
  10. combine the bananas (mashed)
  11. applesauce/oil
  12. milk
  13. agave
  14. brown rice syrup. Add the flax mixture to this bowl as well
  15. Combine wet and dry ingredients in the larger bowl
  16. Slowly add the cranberries and walnuts
  17. if desired
  18. Scoop approx. 1/3 C of the batter into each muffin liner - If You Care makes a wonderful non-bleached
  19. compostable liner
  20. Bake for 18-20 minutes at 375
  21. Let cool and enjoy!
