Candied Ginger Pears

During the holidays, it can be hard to get away from cream and butter-laden desserts. But this superhero Candied Ginger Pears dessert from my book (p. 279), is delicious and sophisticated, and is a great option to serve to your guests!

Ingredients

  • ground almonds 1 cup
  • brown rice syrup 2 tbsp
  • large or 4 small pears
  • halved and core scooped out 3 na
  • pear or apple juice 1.5 cup
  • ginger juice (grate 1" fresh ginger and use your fingers to squeeze out the juice) 1 tsp
  • Pinch of fine sea salt 1 na
  • kuzu mixed with 1 T cold pear juice 1 tbsp
  • fresh lemon juice 1 tbsp
  • lemon zest 1 tsp
  • maple syrup (optional) 4 tsp

Directions

  1. Heat a dry skillet over medium heat
  2. Add the almonds and toast for 3-5 minutes
  3. stirring constantly
  4. until fragrant and golden brown
  5. Transfer to a small bowl to cool
  6. When cool
  7. buzz the almonds in a food processor or blender until very finely ground
  8. Heat the rice syrup in a small saucepan
  9. Add the ground almonds and stir over medium-low heat until the mixture thickens
  10. Set aside
  11. Arrange the pears in a deep skillet
  12. cut sides up
  13. Add the pear or apple juice to the pan along with the ginger juice and salt
  14. Cover the pan
  15. bring to a boil
  16. then reduce heat to medium and simmer for 7-10 minutes
  17. or until the pear halves are soft
  18. Using a slotted spoon
  19. transfer the pears to a serving platter
  20. reserving the cooking liquid
  21. Fill the hollow of each pear with some of the ground almond mixture
  22. Stir the diluted kuzu into the reserved cooking liquid
  23. and heat for 3-5 minutes
  24. stirring constantly
  25. until the sauce thickens
  26. Remove from heat and stir in the lemon juice and zest
  27. Pour the sauce over the pears and serve
