Cinnamon Butternut Squash
Delicious and simple! This, along with brown rice, is one of my favorite lunches!

- large butternut squash cut into 1 inch cubes (remove seeds and fibers) 1 na
- cinnamon 2 tsp
- nutmeg 2 tsp
- brown sugar 1 tbsp
- lemon juice 1 tbsp
- Place squash cubes in a 2 quart casserole or baking dish. Sprinkle with spices and brown sugar. Drizzle with lemon juice. Bake uncovered in 375 degree oven for 45 minutes or until tender.
