Cinnamon Butternut Squash

Delicious and simple! This, along with brown rice, is one of my favorite lunches!

45 min cook | 4 servings | 10 min prep

Ingredients

  • large butternut squash cut into 1 inch cubes (remove seeds and fibers) 1 na
  • cinnamon 2 tsp
  • nutmeg 2 tsp
  • brown sugar 1 tbsp
  • lemon juice 1 tbsp

Directions

  1. Place squash cubes in a 2 quart casserole or baking dish. Sprinkle with spices and brown sugar. Drizzle with lemon juice. Bake uncovered in 375 degree oven for 45 minutes or until tender.
