Healthy Oatmeal Raisin Cookies!

A healthy alternative to regular cookies. No eggs, no sugar, no flour, and no butter!

Ingredients

  • 3 Mashed Bananas (ripe)
  • 1/3 cup Apple Sauce
  • 2 cups Oats
  • 1/4 cup Almond Milk
  • 1/2 cup Raisins
  • 1 tsp Vanilla
  • 1 tsp Cinnamon

Directions

  1. Peel bananas and mash into a mixing bowl.
  2. Add apple sauce
  3. oats
  4. and almond milk. Stir together.
  5. Add raisins. Stir.
  6. Add vanilla and cinnamon. Mix well.
  7. Use a spoon to scoop small-medium size amounts for each cookie and place on an ungreased cookie sheet.
  8. Bake the cookies at 350 degrees for 15-20 minutes.

    I made these cookies today, following the recipe exactly except for adding a couple of tablespoons of mini vegan chocolate chips. They’re tasty, but they bear little resemblance to the cookies in the photo that accompany this recipe (a photo of mine is attached). I’d describe them as banana-raisin haystacks, not oatmeal-raisin cookies! Any idea on why mine don’t look cookie-like like the ones in the photo? You sure the ones in the photo don’t contain any flour? If I make these again (and they are easy, healthy and tasty – if you like the taste of ripe bananas!), I will add some shredded, unsweetened coconut and replace the raisins with dried cranberries.

    Also, I had to bake them for 20-22 minutes before they were done, and let the cookies sit on the non-stick baking sheets for 5-10 minutes before I was able to remove them without their sticking.

      I also tried these, and mine looked like the photo above, not really like a cookie at all. Tasted ok, but not great. I made 3 trays before I decided to make them more “unvegan” and probably not as healthy, by adding flour and an egg and a pinch of baking soda and a bit of salt…….much tastier results!!

    I only had 1 banana, so I blended 1.5 green apples into applesauce as a substitute. I also added a mixed cup of brown rice flour and gluten free all purpose flour and used only 1 cup of steel cut oats along with 9 drops of stevia, about a 1/2 cup of maple syrup and 1Tbs of extra-virgin coconut oil. Didn’t need the almond milk.. They were delicious!!

    Thank God for your comments! I wish I’d read them BEFORE making these “cookies.” Mine don’t look anything like cookies…or dog treats for that matter. They do bounce though…which the toddler finds pretty amusing. They are really delish, but perhaps next time I’ll try Rod’s recipe and add some gluten-free flour to the mix.
