Loving Wraps

This dish is amazingly good. I am not a big fan of kale or broccoli or onion, and this mixture is so good, especially with the hummus, the sun-dried tastes cheesy. It’s also very flexible, you can substitute many items. And, it is great because you don’t mess up the oil by cooking it on high heat. I also like to add color (red peppers, edamame, etc).

Ingredients

  • kale 1 pound
  • broccoli 1 pound
  • onion 1 na
  • olive oil 0.125 cup
  • hummus 1 na
  • Spelt tortillas 6 na
  • garlic powder 1 tsp
  • salt 1 tsp
  • pepper 1 tsp
  • cumin 1 tsp
  • cayenne 1 tsp

Directions

  1. Sautee the vegetables on high in water for 5 minutes until bright green.
  2. Then turn heat to low and add 3 TB olive oil
  3. and let simmer for 2-3 minutes
  4. and add the seasonings.
  5. When veggies are done
  6. spread hummus on a tortilla
  7. add veggies
  8. roll up and enjoy!
