root vegetable cassoulet

I mentioned this dish in the book when I talked about my big Thanksgiving bash a few years ago, and some of you have asked for the recipe. I asked the team at FoodInk Catering to send me the recipe, so here it is! A perfect dish for your Thanksgiving.

Ingredients

  • minikins (miniature pumpkins) roasted until tender 6 na
  • dried white beans (soaked and cooked) 0.25 pound
  • tomato paste 1 tsp
  • sweet potato
  • 1/2 inch diced 1 na
  • parsnip
  • 1/2 inch diced 1 na
  • celeriac
  • 1/2 inch diced 0.5 na
  • rutabaga
  • 1/2 inch diced 0.5 na
  • baby carrots (left whole if small) 0.5 pound
  • small onion
  • finely diced 1 na
  • cloves garlic
  • finely diced 2 na
  • vegetable stock 1 pint
  • pumpkin puree 1.5 cup
  • silky tofu 6 ounce
  • ground nuts 4 tbsp
  • vegan breadcrumbs 4 tbsp
  • chopped parsley 4 tsp
  • pinch salt and pepper to taste 1 na
  • olive oil for sautéing 1 tbsp

Directions

  1. In a large
  2. wide pot
  3. sauté onions and garlic in olive oil on medium heat until translucent.
  4. Add in all the vegetables and sauté til browning on edges
  5. then stir in the tomato paste.
  6. Cook for 2 minutes.
  7. Add vegetable stock in 3 increments
  8. allowing to boil and slightly thicken between each addition.
  9. By hand
  10. chop and mash with a knife 1/3 of the beans to form a paste
  11. add whole beans and mashed to vegetable mix.
  12. Cook until vegetables are tender.
  13. Add 1 cup of the pumpkin puree
  14. parsley
  15. and season to taste.
  16. Simmer for 10 minutes on low heat
  17. then allow to cool.
  18. Cut the top of the minikin and scoop out the seeds
  19. being careful not to tear the pumpkin flesh or skin.
  20. Then
  21. fill the cavity with the cassoulet mix.
  22. In a blender
  23. mix together tofu and remaining pumpkin
  24. then fold in nuts.
  25. Spoon mix onto the top of each minikin
  26. and sprinkle with breadcrumbs.
  27. Bake for 10-15 minutes in a 375 degree oven
  28. and serve.
