vegan crepes

A fine example of not having to give up the good stuff!

Ingredients

  • rice milk 0.5 cup
  • h2o 0.5 cup
  • melted earth balance 0.25 cup
  • maple syrup 2 tbsp
  • whole wheat flour 1 cup
  • salt 0.25 tsp

Directions

  1. In a large mixing bowl
  2. blend rice milk
  3. water
  4. 1/4 cup butter
  5. syrup
  6. flour
  7. and salt. Cover and chill the mixture for 2 hours.
  8. Lightly grease a 5 to 6 inch skillet. Heat the skillet until hot. Pour approximately 3 tablespoons batter into the skillet. Swirl to make the batter cover the skillet
