My friend Mimi sent me this recipe for these crackers from Elana’s Pantry – they are vegan and gluten free, and they look good! Check it out:

20 min cook | 2 servings | 30 min prep

  • blanched almond flour 2 cup
  • celtic sea salt 0.75 tsp
  • Herbes de Provence 2 tbsp
  • olive oil 1 tbsp
  • water 2 tbsp


  1. In a large bowl
  2. combine almond flour
  3. salt and and Herbes de Provence
  4. In a medium bowl
  5. whisk together olive oil and water
  6. Stir wet ingredients into almond flour mixture until thoroughly combined
  7. Roll the dough into a ball
  8. Press between 2 sheets of parchment paper to ⅛ inch thickness
  9. Remove top piece of parchment paper
  10. Transfer the bottom piece with rolled out dough onto baking sheet
  11. Cut dough into 2-inch squares with a knife or pizza cutter
  12. Bake at 350° for 9-11 minutes
  13. until lightly golden
  14. Let crackers cool on baking sheet for 20 minutes
  15. then serve

    OMG!! I just made these, and they’re SO delicious!! They came out just like the photo and are the consistency of a cracker. I even got my husband and preschooler to try them and they both LOVED them! My husband said, “Parmesan cheese?” I just smiled. AMAZING!!
