scrambled "eggs"

This tofu scramble recipe is a variation on the Scrambled Tofu recipe that is in The Kind Diet, but this one is much more like traditional scrambled eggs. It's such a simple dish, and is very good. It turns out a lot like scrambled eggs, and if you want you could throw in anything else that you love in scrambled eggs or that you need to use up in your fridge!

Ingredients

  • 4 mushrooms
  • 2 stalks of scallions
  • 1/2 package of tofu
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • 1 tablespoon olive oil
  • 1 splash of ume vinegar

Directions

  1. Heat the oil in a pan.

  2. Toss in the mushrooms and scallions, and lightly sauté.

  3. Add the tofu to the pan (squeeze it into the pan, crumble style. This will make it turn out like eggs)
  4. Add a pinch of salt to the tofu, and let it cook.

  5. Then add a pinch of pepper and the ume vinegar.

  6. Sauté for 5-10 minutes on medium heat.
 Basically just cook it like you used to cook eggs.
  7. Serve and enjoy!

    the only thing with this is that i don't live anywhere near a health food store or anything, so is there any other vinegar that could be used besides ume?

    I did something like this for breakfast yesterday, it was super yum! My variation onions, leeks, pickled chargrilled Zucchini fired with peanut and olive oil. when browned I add the tofu. quickly scrambIe. I might when serving it, place it on top of a bed of watercress and rocket!!

    I always add a pinch of Tummeric, fenugreek and dry mustard. The tofu turns yellow like eggs.

    I am making this for dinner tonight. Alicia, what do you pair it with (as in a whole grain?)

    I am thinking a whole wheat pita, but am trying to get away from breads and go more towards whole grains themselves.
