Beet Chips

A few weeks ago I decided to start buying a box of veggies from a local farm each week. Doing so challenges me to try new recipes, and this week I happened to get beets! I never thought I would like these, but this recipe for beet chips is fabulous! Even my husband loves them! One note: they really do need to be sliced VERY thin. While they are still delicious if you use a regular knife to slice them instead of a v-slicer, they are not as crispy.

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 8 medium beets, peeled, root intact

Directions

  1. Heat sugar and water in a medium sauce pan over medium heat just until sugar melts, then turn off.
  2. While water is heating, slice beets very thin using a mandoline or v-slicer. Add beet slices to the simple syrup and let stand for 15 minutes
  3. Drain for 5 minutes, then lay beets on in a single layer on a baking sheet lined with aluminum foil.
  4. Bake at 250 degrees for 1 hour, then let cool. Store in a covered container to retain freshness.
