Oatmeal coconut pancakes

I recently discovered the happy marriage between oatmeal and coconut milk. It's a match made in heaven, which inspired this recipe. :) These pancakes are dense and filling-- no fluffy pancake recipe here! My boyfriend said about these 'cakes, "sometimes I'm left hungry after our Sunday breakfasts, but not today!" They are the stick-to-your-ribs type of pancakes that are great for fall/winter. They also are coincidentally on the gluten-free side, if you do not have an oat issue. It's an original recipe and I hope that other Kind Lifers will enjoy! Makes approximately 10 pancakes. Add some vegan grain-sweetened chocolate chips for even more fun!

Ingredients

  • 1 cup oat flour
  • 1 cup quick-cook oatmeal
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup coconut milk
  • 1/2 cup apple sauce
  • 1/2 cup shredded coconut (optional!)
  • 1/2 cup vegan chocolate chips (optional!)

Directions

  1. In a large bowl, mix up all your ingredients.
  2. Allow to sit for a minute while you heat up your skillet.
  3. Sizzle Earth Balance or other oil in your skillet.
  4. Spoon pancake mixture onto skillet & cook until golden brown.
  5. Serve with maple syrup + of course, enjoy!

    Works best with regular coconut milk, and not the "lite" kind. :)
