One of my favorite success stories is from our community member, Tevia. She was also featured in my book. Tevia is an amazing superhero and was able to cure her MS symptoms through diet! She is a hardcore athlete and a super sweet soul. I love her! Tevia's plunge into the superhero lifestyle wasn't always easy for her either because of a persistent sweet tooth. I think a lot of you can probably relate to that too. But she took her new-found knowledge of cooking and eating kinder and began a vegan baking business called The Lil' Vegan Baker That Could. Her Peanut Butter Truffles and Peppermint Cookies (I didn't even think I liked Peppermint before trying these) are so freakin' good! It's insane how tasty they are! So if you live in LA, you must try her treats. And if you aren't in LA, you are in luck! Tevia was sweet enough to give me the recipe for her amazing Chocolate Peppermint Glazed Cookies. Enjoy! Ingredients

  • 2 1/2 cups of unbleached flour
  • 1/3 cup of unsweetened vegan cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegan margarine
  • 1 1/2 cups of coconut palm sugar
  • 1/3 cup unsweetened plain soy milk
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons pure peppermint extract
  • 1/2 cup maple syrup
  • 1/2 cup cocoa
  • 1/4 cup water
  • 1/4 teaspoon apple cider vinegar
  • 1/8 teaspoon salt
  • 2 teaspoons vanilla
  • 1 teaspoon peppermint

Directions

  1. Preheat the oven to 350.

  2. Whisk the dry ingredients together in a small mixing bowl.

  3. Blend the wet ingredients together in a large mixing bowl.

  4. Add the dry mixture to the wet mixture to form the cookie dough.

  5. Make 2 inch balls and bake them on an ungreased cookie sheet for 7-9 minutes.

  6. Let them cool on a wire rack, while you prepare the glaze.

  7. To make the glaze, combine the maple syrup, apple cider vinegar, salt, cocoa and water in a small saucepan.

  8. Bring it to a bubble over medium heat.

  9. Remove from the heat and stir in the vanilla and peppermint extract.

  11. Quickly sprinkle them with vegan crushed peppermints.

  12. Allow the cookies to sit for 5 - 10 minutes until the frosting solidifies.

    I made these cookies this evening and confirmed that the ingredients for the glaze start at the maple syrup :) They are pretty tasty!!!

    Looking at the recipe I'd say that the frosting ingredients start at the maple syrup.

    can you please clarify what the dry and wet ingredients are as opposed to the ingredients for the frosting. I would love to make this recipe but am a little confused. Thank you!

    OMG! These look so good! I love when the holidays roll around because I love cooking with peppermint. For my family Christmas party I usually make a yummy candy cane cake. This year I'm going to try out a new recipe and make vegan chocolate candy cane cheesecake tarts. Cross your fingers.
