Fluffy Raspberry Frosting

This frosting is to die for on my lemon cupcakes. :)

Ingredients

  • 1/2 cup coconut oil
  • 1/4 cup coconut milk
  • 3 cups powdered sugar
  • 1 tablespoon vanilla extract
  • 1/4 cup pureed raspberries

Directions

  1. In a large bowl beat together the coconut milk and coconut oil. Make sure the coconut oil is in it's solid form.
  2. Add half of the powdered sugar and beat well until combined.
  3. Add the remaining ingredients and continue to beat the mixture until light and fluffy.
  4. I like to let this thicken in the fridge while the cupcakes cool off. Makes it easier to decorate with and sometimes the vegan frosting melts a lot easier.
