Steamed Marinated Vegtables

This is something my father used to make on the grill by cooking the veggies in a foil wrap with some simple ingredients. Easy to put together and can be steamed on the stove top and takes about 25 minutes to a half an hour, low in calories and nearly no fat. It includes most any veggi of your choice, however I prefer mushrooms, celery, carrots, bell peppers, onions, and zucchini squash. Diced potatoes are optional but will require longer cooking time.

Ingredients

  • 1 Bell Pepper
  • 2 zuchini squash
  • 1 Large Onion
  • 4 Carrots
  • 5 stalks of Celery
  • 1 1/2 cups Chopped Mushrooms
  • 1/4 cup Soy Sauce
  • 1/3 cup Cooking wine
  • 2 Cloves of Garlic Diced
  • 1 teaspoon Black Pepper
  • 2 tablespoons Butter or Margirine
  • 1 pinch Any other preferred spices

Directions

  1. Chop Carrots, Zucchini, Celery, Onion, and Bell Pepper to bite size. Slice Mushrooms.
  2. Take a Large stir fry pan or Sauce pan with lid and add Veggies.
  3. Add 1/4 Cup of Soy Sauce.
  4. Add 1/3 cup cooking wine.
  5. Add 2 Cloves Diced Garlic.
  6. Add 1 tsp Black Pepper.
  7. Add 2 Tbsp of Butter or Margarine.
  8. 1 pinch of any of your proffered spices.
  9. Cook on Medium Heat with lid, stirring occasionally for 20 -30 Minutes or until veggies are soft.
