Avacodo, Cucumber and Tomato Salad

This recipe is my kids Fav! I use to work at a find dining restaurant while I was in university. They made this salad. I just change it a little. I usually do it by eye and taste. This is a roughly how I make it. You can choose how much tomato, cucumber or Avacodo you would like to add. Enjoy!!!

Ingredients

  • 2 Avacodo
  • 8 ounces grape tomato
  • 3 tablespoons veganiaise
  • 1 teaspoon dijon mustard
  • 1 pinch Agave
  • 1 pinch salt
  • 1 pinch fresh ground pepper
  • 1 cucumber

Directions

  1. open avacodo and cut up into chunks
  2. add grape tomato, I usually cut them in half
  3. slice up cucumber
  4. Make up the salad dressing
  5. Mix the dressing with the veggie
