bean and cheese enchiladas

my mom used to make these enchiladas and i was in love with them, so i made some adjustments and veganized it lol. They are really yummy, i have them almost once a week!

Ingredients

  • 1 can vegetarian refried beans
  • 1 can red enchilada sauce
  • 9 tortillas (Ezekial sprouted grain are super yummy)
  • 5 tablespoons shredded "cheese"

Directions

  1. 1. warm tortillas in microwave about 30 seconds just to make them soft enough to fold. Spread about 2 tbsp. ( or as much as you want) refried beans down the center of tortilla. Fold ends in then roll, like a burrito.
  2. 2. pour about 2/3 of the enchilada sauce into a baking dish. As you lay the enchiladas in the dish, roll them in sauce to coat them. Once you have all the enchiladas in the dish, pour remaining sauce over enchiladas.
  3. 3. Place them in a 350 degree oven for 18 minutes
  4. 4. Take dish out and top with shredded cheese, put back in oven for about 5 minutes or until cheese is melted. I always serve with Tofutti sour cream and spanish rice on the side.
