Very Berry Vegan Pudding

This pudding is delicious and could probably even substitute for that crazy vegan yogurt we get from the supermarket. Plus, it's super easy. Perfect to keep in the fridge for everything from kids lunches to decadent dinner party dessert. :)

Ingredients

  • 3 cups soy milk
  • 1 cup rice flour
  • 1/4 cup mixed berries
  • 3/4 cup raw caster sugar

Directions

  1. Mix the rice flour with a small amount of the milk using a fork until it makes a smooth paste.
  2. In a saucepan, add the milk and sugar, and bring it to the boil, stirring the whole time.
  3. Lower the heat and add a small amount of the hot milk to the paste and now, add the paste mixture to the hot milk, stirring to make sure it doesn
  4. Bring to the boil again.
  5. Add the berries.
  6. Lower the heat and simmer for about twenty minutes.
  7. Pour into a dish and allow to cool/ set and then pop it in the fridge.
  8. Wait until set or preferably, leave overnight.
