Dibbles Protein Rich Vegan Waffles

These waffles are hearty and yummy! They have protein and high fiber. Slather on some nut butter and maple syrup for extra protein and some zip or whatever topping you fancy. When using a standard waffle iron this recipe yields 4-6 full size waffles. Half a waffle is super filling so you can split one with a loved one or have a super hearty breakfast. I freeze the rest on a plate in a ziploc then break them in half and toast them when reheating. Quick note: Though the brown sugar/ alternative sweetener is optional I recommend using it because it mellows the chickpea flour flavor, though for a savory waffle it would be fine without.

Ingredients

  • 1 cup Whole Wheat Flour
  • 1/2 cup Chickpea Flour
  • 1/2 cup Tapioca Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 2 1/4 cups Soy Milk or other non dairy milk
  • 1/4 cup safflower oil
  • 3/4 teaspoon kosher salt or sea salt
  • 3 tablespoons Brown Sugar
  • 3 tablespoons (Optional) Brown Sugar or appropriate sugar substitute
  • 1 teaspoon Vanilla

Directions

  1. Plug in Waffle Iron, to ensure that it is throughly and evenly heated
  2. Combine the dry ingredients in a large mixing bowl
  3. Stir in Oil and Vanilla
  4. Stir in Non dairy milk in small batches to keep batter smooth
  5. Spray Waffle Iron with cooking spray then close lid
  6. Open lid and pour in batter
  7. Wait a couple of minute for steam to subside
  8. Pull waffle off and repeat
  9. Enjoy!
