Mochi Waffles Drizzled with Lemon-Walnut-Rice Syrup

I was on a kick and had the mochi waffle from my book (p. 286) for breakfast a lot. It takes just ten minutes...yum!!! If you haven't had this, you really must! It's superhero, and it's delicious and quick.

Ingredients

  • 1 cup walnuts
  • 1/2 cup brown rice syrup
  • 1/2 lemon (juice of)
  • 1 -1.5 packages plain mochi (Grainaissance brand is good)

Directions

  1. Toast the walnuts in a dry skillet over medium heat until just starting to turn golden and fragrant, about 5 minutes, stirring often
  2. Transfer to a bowl to cool, and chop coarsely
  3. Set aside
  4. Preheat a waffle iron
  5. Cut a package of mochi into 3 large pieces, widthwise
  6. Slice each piece into long fingerlike pieces, about 3/4 inch wide
  7. Using 6 to 8 strips for each waffle, place the mochi strips on the hot, ungreased waffle iron and close the top
  8. Cook until puffed and slightly crispy but not too hard and dry, about 3 minutes, or until your waffle iron signals that it's done
  9. Remove the waffle and place on a plate (do not stack the waffles because they will stick together)
  10. While the waffle cooks, combine the rice syrup with 3 T water, lemon juice, and toasted walnuts in a saucepan
  11. Stir together over medium heat just until warmed
  12. Pour over the waffles
  13. Serve and eat waffles as soon as possible- they are best hot and crispy!

    Ohhh so yummy! I didn't have walnuts so I used pecans. I think I will make this tomorrow too!

    I finally found mochi at an Asian grocery store (for some reason non of our health food stores carry it)! And just the other day I found a waffle iron at a garage sale for five dollars! Sooo I had had to try this recipe and I give it two thumbs up! yummy! :D

    I have had your book for over a year now, and for some reason have never tried this recipe until now - what a mistake! I just had it for breakfast with steamed greens and ran over to the computer to post this comment about how wonderful it was! Yummy! It was such a treat - sweet and lemony and good for you! Thank you for all these great recipes!
