The Ultimate Grilled "Cheese" Sandwich

Super easy, yummy, and slightly naughty. The perfect treat for those who still secretly crave dairy (not me, of course!).

Ingredients

  • 1/2 cup Tofutti better than cream cheese
  • 1 slice of soy cheese
  • 1 tablespoon diced butternut squash (I use frozen pre-diced)
  • 1 tablespoon frozen or fresh chopped spinach
  • 2 slices of bread
  • 2 teaspoons earth balance spread

Directions

  1. saute squash and spinach with a pinch of salt for 2-3 minutes. You could add garlic if desired.
  2. remove from pan and place in a bowl. Let cool slightly.
  3. mix vegetables with Better Than Cream Cheese spread.
  4. Spread generously on one slice of bread.
  5. Cover the veg/cheese mix with a slice, or two, of soy cheese.
  6. Top with the other slice of bread, and butter the outside of each slice with earth balance.
  7. Lightly fry until golden brown on the outside and gooey inside.
