cucumber melon salad

This is a light refreshing snack or side dish on a hot summer day! Any type of melon can be used.

Ingredients

  • 1 cucumber
  • 1/2 canteloupe
  • 2 tablespoons balsamic vinegar

Directions

  1. Remove seeds from canteloupe
  2. take melon off rind and chop into bit size pieces
  3. peel cucumber and chop into bite size pieces
  4. put cucumber & melon in a bowl
  5. drizzle vinegar over top & toss to cover
  6. chill & enjoy!
