My Very First Raw Vegan Chocolate Cake

This recipe was made from the leftover almond pulp I had after making my almond nut milk :)

Ingredients

  • 3 cups almond pulp
  • 1 cup Carob powder
  • 3 cups shredded coconut
  • 3 cups banana or pitted dates

Directions

  1. For the cake: In a food processor, combine almond pulp, shredded coconut and carob powder. While mixing, slowly add the banana or pitted dates until thick dough texture is reached. Flatten dough on any cake pan or square glass baking dish.
  2. For the frosting: In a blender, mix 2 cups banana or 1 cup pitted dates; 1/4 cup carob powder; 3 tbsp olive oil or VCO; 1 cup water. Blend until smooth, thick texture is achieved. Pour on top of cake and spread evenly. Chill for an hour and enjoy!
