Sweet Potato Aioli

Sweet potato aioli on sunflower seed bread alongside parsley and arugula salad with walnuts and goat cheese.

Ingredients

  • 2 Large Sweet Potatoes
  • 3/4 cup Raw Almonds
  • 5 cups Cloves of Garlic
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Freshly Ground Pepper

Directions

  1. Bring 2 inches of water to a boil in a medium sauce pan.
  2. While waiting for the water to boil, peel and cut sweet potatoes into small chunks
  3. Steam potatoes 10-12 minutes or until soft, remove and put aside to cool.
  4. Combine all ingredients in a food processor until chunky smooth. Serve at room temperature or chilled.
