Quinoa with zucchini and arugula

A simple and quick, no fuss recipe. Serves one as a standalone dish or two as a side dish. I use olive oil and soy cream, but you can use any kind of oil and cream, or skip the cream altogether.

Ingredients

  • 1/2 cup quinoa
  • 1 zucchini
  • 1 small onion
  • 1 handful of arugula
  • 1 cup water
  • 1 tablespoon olive oil
  • 1/8 cup soy cream
  • 1 pinch salt
  • 1 pinch pepper

Directions

  1. Rinse the quinoa well.
  2. Chop the onion. Dice the zucchini or cut it in half and slice each half into half-moons. Chop the arugula.
  3. Sauté the onions. Add the zucchini and stir. Add the quinoa and stir.
  4. Add the water and bring to a boil. Reduce heat and let simmer until the quinoa is tender and the water has evaporated (approx. 15 minutes), stir occasionally.
  5. Add the soy cream and stir. Salt and pepper to taste. Let simmer for another minute or so, until you get a creamy consistency.
  6. Add the arugula and stir.
  7. Remove from heat and let sit for 5 minutes.
  8. Serve.
