my veggie burger

these are the yummiest veggie burgers I have created. They are full of protein and veggies and are very filling....my kids and husband and non vegan friends love them. I find that when I,m in need of protein,or" naughty" vegan food, this burger is my perfect go to meal....enjoy!

Ingredients

  • 1 cup cooked beans (your favorite)
  • 1 block of tofu
  • 1 cup shredded zuchini or carrot
  • 3 mushrooms (di)ced in small pieces
  • 1 small oignon chopped
  • 1 cup oats
  • 2 tablespoons tahini
  • 1 tablespoon dijon mustard
  • 1/4 cup soy sauce (organic)
  • 2 egg replacer or mashed potatoes as a binder
  • 2 teaspoons dill
  • 2 teaspoons steak spices
  • 1/2 teaspoon cayen pepper
  • 1 teaspoon garlic powder

Directions

  1. in a big bowl mash the bean and the tofu with a potatoe masher or fork or hands (great for kids), the mixture should be crumbly and pasty
  2. add the shredded zuchini or carrot or a mix of both
  3. add the mushrooms, oignon and oats...mix all together
  4. add all remaining ingredients, mix well and form patties
  5. cook in a pan with a little olive oil, at medium to low heat...about 5 to 7 min on each side (until crispy on the outside and cooked through)...you may want to cover with lid while cooking so tofu will be well heated....you might do a few batches until you get them just the way you like them.
  6. serve on a whole grain bun with lettuce, tomatoes,alfafa sprouts, vegenaise..etc etc....whatever you like.....enjoy
