Almond Joy No-Bake Cookies

Amazingly good, sugary sweet cookies....for those days when you think you can't keep doing this vegan thing anymore ;-)

Ingredients

  • 2 cups sugar
  • 1/2 cup earth balance buttery spread
  • 1/2 cup milk substitute ( I used coconut)
  • 4 cups rolled oats
  • 1 cup coconut flakes
  • 1/2 cup almonds, slivered or chopped
  • 6 tablespoons unsweetened cocoa
  • 1 teaspoon almond extract

Directions

  1. First place sugar, butter and milk in a med. saucepan.
  2. Bring to a rolling boil over med-high heat.
  3. Boil for two full minutes.
  4. Then add cocoa and extract.
  5. Mix well.
  6. Then all remaining ingredients.
  7. Mix well again.
  8. Now place large blobs onto parchment paper to set at room temperature for about 20 minutes.
  9. Place in a sealed container on the counter ( and try not to gobble them all up in a day!)

    My father in law ate this at easter dinner, he said these are good my mom used to always make these cookies, but yours are better I don't know what it is but they sure are good!!
