Mango chutney

Fav dessert which can be used as a dressing to any salad. Some people make it a bit different but this is the way my family normally makes it.

Ingredients

  • 1 teaspoon curry
  • 3 pounds 3 ripe or semi ripe mangos, or 2 ripe mangos 1 semi ripe mango
  • 1 1/2 cups cup water
  • 1 teaspoon scotch bonet pepper(really hot) Jamaican
  • 1/2 cup brown or white sugar

Directions

  1. Slice mangos, removing all skin, cut mangos in sqaures if desired.
  2. Put all pieces including seed in water. Boil.boil all ingredients for 30 mins or until desired consistency
  3. Then add sugar to thicken sauce. enjoy warm or cool over ice cream or any dish or by itself.
  4. If scotch bonnet is too spicy add cayenne pepper to taste,paprika to taste. Both the cayenne and paprika to substitute for scotch pepper.
