CauliFlower Salad

This is a replacement for tuna salad... Sounds STRANGE but it is real, for new people in the VEGGIE/VEGAN world, killing old CRAVINGS is the ticket... TRUST that this gets rid of the "tuna sandwhich" HUNGER... EAT THIS SALAD AND MAKE IT LIKE YOU MADE THE TUNA SALAD FOR A SANDWHICH!!! I AM NOT VEGAN, I AM A VEGGIE, SO REPLACE MAYO YOUR WAY!!!

Ingredients

  • 1 cauliflower head
  • 3 celery stalks
  • 1 med onion
  • 1 cup mayo

Directions

  1. cut off cauliflower, skinning florets off stalks (save stalks and leaves for soup,) into micro bowl (unless you don't microwave, then small pot,) al dente is the trick, not to soft in the micro 5-10 mins., on stove just to boil then remove from stove and the hot water.
  2. chop celery and onion, (whatever else you perferred, plus or minus in your favorite tuna sandwhich mix, chop now,)
  3. mix veggies with drained cauliflower and mayo, (or whichever mayo substitute you prefer, if new and you are not vegan regular mayo is fine, add more or less as to your taste)
  4. now is the time to add or minus whatever you preferred in "that old tuna sandwhich mix"
  5. season to taste your old favorite way, cayenne&black pepper and your salt choice is great
  6. now put it on your favorite toast, with your favorite fixings, and favorite chip choice, ENJOY!!!
  7. TRICK- keep cauliflower pieces small so they will stay in sandwhich when holding up to eat!!!
