Banana Oatmeal Coconut Bars

I found this quick and simple recipe in a book, called "Conveniently Vegan" at the local library. There were a lot of great recipes in the book (I am even thinking about buying a copy), but as a desert junky, this was my favorite! It also makes a quick breakfast, too.

Ingredients

  • 2 cups rolled oats
  • 1/4 cup maple syrup
  • 2 large ripe bananas, mashed
  • 1 cup coconut, grated

Directions

  1. Preheat oven to 350 degrees. Put all ingredients together in a bowl and stir until mixed well. Press mixture into a 9X9 inch baking pan. Bake for 30 minutes. Let pan cool on baking rack. When cooled, cut into 16 bars. Enjoy!
