Greens a la Sesame

A quick stove-top dish that is great on its own as a side dish OR on top of rice, pasta or potatoes as an entree.

Ingredients

  • 2 tablespoons grape seed oil (or another skillet-friendly oil)
  • 1/3 onion (sliced)
  • 2 cloves of garlic, minced
  • 5 baby bok choy blubs (stalks cut from bulbs and washed individually)
  • 1 bunch of spinach (about 1/2 a pound), chopped
  • 1 large tomato (sliced)
  • 1/2 cup Soy Vay Toasted Sesame Dressing (you can use more or less, if desired)
  • 1/3 cup water, if necessary (to add to skillet if the dish begins to stick)

Directions

  1. Heat grape seed oil in skillet on stove top, adding garlic and onions.
  2. Saute garlic and onions for about three minutes. They should be translucent, but not brown.
  3. Add bok choy and spinach.
  4. Cover and periodically toss greens for approximately 10-15 minutes. You want the greens to be wilted and soft.
  5. Add in sliced tomatoes, toss and cover for 3 minutes.
  6. Uncover, toss and pour Sesame Dressing on top.
  7. Toss quite a bit to make sure the dressing coats everything at least a little.
  8. Cover for about three minutes.
  9. Remove skillet from stove and serve.
