Amazing steel cut oats

Amazing baked steel cut oats for breakfast!!! No added sugar, naturally sweetened from fruit, so delicious! You must try this recipe, you will never buy packaged instant oatmeal again!

Ingredients

  • 1 1/2 cups steel cut oats
  • 4 cups very hot or boiling water
  • 1 cup dried fruit (raisins, chopped apricots, etc)
  • 2 cups fresh or frozen fruit (cut into bite size pieces if needed, cherries and blueberries are my favorite combo)
  • 1/2 tablespoon peanut butter (mix into individual serving before eating)
  • 1 pinch salt to taste (mix into individual serving before eating)

Directions

  1. Add steel cut oats, hot water and dried fruit to a covered 3-5 quart dutch oven.
  2. Let sit at room temperature for 6 to 8 hours.
  3. Heat oven to 400 degrees, add fresh or frozen fruit to oats, mix everthing together, and bake covered for 35 minutes.
  4. This makes 6 to 8 servings. Store it in the fridge in the dutch oven, and reheat single servings. After reheating add the 1/2 tablespoon of peanut butter, and salt to taste.
