Since the kitchen is being slowly remodeled,I don't have an oven,and my oatmeal cookie craving was getting a bit out of hand! I am not one to buy old stale,processed cookies from a store,so I looked up a few recipes and improvised,with a delicious outcome! -1 cup of old fashioned rolled oats ( I use Gluten Free Oats,as I'm wheat intolerant http://www.glutenfreeoats.com) -cinnamon and nutmeg -about 1/4 to 1/2 cup of water -one scoop of coconut flour (high fiber,non allergenic,much preferable to whole wheat,spelt,or any other flour) -drizzles of molasses (for iron) and agave nectar or coconut sugar -baking powder Mix ingredients,you can also put in dried fruit,I didn't have any on hand,heat skillet and melt Earth Balance in pan.Switch down to medium/low,put mix in pan,cover with lid,let cook at least 5 minutes,if you like it toasty cook longer.Keep an eye on it! It should come old golden brown.Sprinkle a bit of coconut sugar on top (lowest glycemic index sweetener).Delicious and very healthy! Enjoy!
