"Cheezy" Boozy Heirloom Tomato Pasta

Tomatoes taste like summer. This quick pasta sauce is a great way to use up some tomatoes that are on the verge of being overripe. Ingredients

  • 1/3 cup sliced leek or onion
  • 2 heirloom tomatoes, chopped
  • 2 tablespoons vodka*, white wine, or balsamic vinegar
  • 2 tablespoons nutritional yeast
  • 1 1/2 teaspoons Braggs Liquid Aminos
  • 1 pinch salt
  • 1 cayenne pepper, optional
  • 1 fusilli pasta (preferably brown rice)

Directions

  1. Start the water for the pasta, and cook according to instructions. Cook enough for two servings.
  2. While the pasta is cooking, sauté the leek or onion in olive oil in a large skillet until softened. Add the rest of the ingredients, and cook until reduced into a thick sauce. Taste and adjust seasoning. It should be done when the pasta is done. Add the pasta directly to the sauce pan, toss to coat, and serve.
  3. *I used the chili-infused vodka. Since you most likely don’t have chili-infused vodka sitting in your freezer, you can add a dash or two of cayenne pepper or add some red pepper flakes to give the sauce some spice.
