Fall Inspired Granola

A delicious apple and cinnamon granola - all with clean ingredients!

Ingredients

  • 2 cups gluten free oats
  • 1 apple
  • 2 tablespoons honey
  • 3 tablespoons brown rice syrup
  • 2 tablespoons cinnamon
  • 1 cup walnuts
  • 1 cup cranberries
  • 1 1/2 cups chopped dried apricots
  • 1 tablespoon apple juice
  • 2 tablespoons coconut oil, kept separate

Directions

  1. Preheat your oven to 325.
  2. Chop your apple into 5-6 pieces.
  3. Put them in a blender with juice, honey, cinnamon, 1 tblsp brown rice syrup, and 1 tblsp coconut oil.
  4. Blend until smooth.
  5. Combine this mixture in a bowl with your oats.
  6. Stir well.
  7. Coat a baking pan with the rest of your coconut oil.
  8. Put your oats in the pan and bake for 25 minutes.
  9. Remove from oven and add cranberries, walnuts and apricots.
  10. Turn the oven down to 250.
  11. Drizzle the rest of your syrup on your granola and mix well.
  12. Let warm at 250 for one hour.
  13. Serve and enjoy!

    I have this in the oven right now... it is smelling amazing!
    I did sub out the honey for maple syrup, cut out the apricots, and added a bit more cranberries. I also did half the amount of walnuts, and added sliced almonds instead.

    Cant wait to try this treat!

    I was just wondering the same thing myself Kristen. Especially given you could use vegan honey (Freedom Syrup), maple syrup, agave nectar or even golden syrup.
    Aside from the 'oversight' it looks tasty.

    Just curious about the honey. As this is a vegan space, why a recipe that isn't vegan was posted?
