Warm cabbage salad

For this recipe try to find cabbage that has been grown in the spring which happens to be more tender than the cabbage you'll find the rest of the year.

Ingredients

  • 1/2 pound New spring cabbage
  • 1 tablespoon Soy sauce
  • 1/2 tablespoon Mirin

Directions

  1. Cut cabbage into bite-size pieces, parboil and drain. Make sure cabbage isn't too soft but, neither should it be raw. Soak in cold water for a couple minutes, drain and squeeze out excess water
  2. In a bowl, mix soy sauce, mirin and a little bit of squeezed lemon/lime. Squeeze the cabbage again and mix with dressing
