Delicious vegan muffins perfect for breakfast or for an afternoon snack. Also sugar and oil free.

Ingredients

  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 2 teaspoons Baking Soda
  • 1 teaspoon Kosher salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Flax seed (with 3 tsp water to make egg substitute)
  • 1/2 cup Applesauce
  • 3/4 cup Agave Nectar
  • 2/3 cup Water
  • 1 tablespoon Vanilla Extract
  • 1 1/2 cups Blueberries
  • 1 tablespoon Lemon Zest

Directions

  1. Preheat oven to 325 degrees and line cupcake tins.
  2. Combine flour, baking powder, baking soda, salt and cinnamon in a large bowl.
  3. Whisk in oil, agave, water and vanilla.
  4. Add blueberries and lemon zest and fold in with a spatula.
  5. Scoop 1/4 cup of the batter into each muffin tin.
  6. Bake for 20-24 minutes.
  7. Let cool before enjoying!
