Thai Red Curry Soup With Red Split Lentils This is a delicious and quick vegan dinner! You may add more of the spices, according to taste!

Ingredients

  • 2 tablespoons Oil
  • 1 Onion
  • 2 garlic cloves
  • 1 tablespoon coarsely chopped coriander (cilantro)
  • 1 tablespoon chili powder
  • 1 tablespoon curry powder
  • 1 tablespoon turmeric
  • 175 grams red split lentils
  • 1 can chopped tomatoes
  • 1 can coconut milk (400ml)
  • 1 pint vegetable stock

Directions

  1. Sweat finely chopped onion and garlic in pre-heated oil in pot.
  2. Add spices, toast them shortly and then add the lentils. Stir well!
  3. Deglaze with tomatoes, coconut milk and vegetable stock.
  4. Cook on low heat for approximately 15 minutes, until the lentils are cooked. Stir regularly!
  5. Add more vegetable stock, if the soup is too thick for your liking!
