Basic Scrambled Tofu

This is just the quick and easy way I prepare scrambled tofu. The source is me looking at several on-line recipes and deciding to prepare it this way to suit my skill level and tastes (Omlette, I'm coming for you next!). For variations, you could add mushrooms, vegan 'cheese,' garlic, jalepenos and serve with ketchup (in photo) or picante. There are a lot ways to make it your own. Makes two generous servings.

Ingredients

  • 1 8 oz. package of firm tofu
  • 1 yellow or white onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup non-dairy milk (unflavored)
  • 1 teaspoon fresh cracked black pepper (to taste)
  • 1 teaspoon fine sea salt (to taste)

Directions

  1. Dice onion and peppers.
  2. Heat onions and peppers in skillet on the stove in the olive oil. If you like your onions very soft, put them in first and let them hang out a few minutes by themselves.
  3. Drain the tofu. In a medium bowl, crumble to tofu into small pieces.
  4. Once the onions and peppers are at the desired tenderness, add the tofu crumbles and non-dairy milk.
  5. Cook until the non-dairy milk is absorbed into the tofu, stirring occassionally.
  6. Add sea salt and pepper, if desired.
  7. Serve and enjoy. I like mine with some ketchup!
