Bubble and Squeak

My favorite Irish-inspired/British-inspired recipe is something called Bubble and Squeak. This was originally a dish that used Sunday Dinner leftovers including meat and vegetables. Before turning vegan, I made this with butter and milk, etc, and served it along sausages. But adapting it to be vegan is so easy.

Ingredients

  • 1 tablespoon or more Earth Balance or olive oil
  • 1/2 Onion, chopped
  • 1/2 Cabbage, chopped
  • 2 cups Already made Mashed potatoes (use as little or as much as you feel appropriate)
  • 1 pinch or more of Salt and Pepper (to taste)

Directions

  1. Saute chopped onions in vegan marg (like Earth Balance) or olive oil.
  2. Add chopped cabbage to soften a bit.
  3. Season (to taste with salt and pepper or any other spices you prefer).
  4. Mix in already made (however you like to make them) mashed potatoes.
  5. Let it cook a little to brown up and serve alongside whatever you choose.
