This week gourmet raw chef Laurel Anderson is giving away 3 signed copies of her beautiful recipe book Wild Plate. The photography is stunning and recipes look fun and yum!

Wild Plate

Watermelon Radish Salad

serves 4–6


3 cups watermelon radish, thinly sliced

1 cup fresh sugar snap peas, roughly chopped

1 medium avocado, peeled, pitted and cubed

1/4 cup green onion, green and white parts, chopped

1 teaspoon white sesame seeds

1 teaspoon black sesame seeds


2 tablespoons rice wine vinegar

2 tablespoons expeller-pressed sesame oil

1 tablespoon minced, fresh ginger

1 ½ teaspoons raw light agave

1/4 teaspoon sea salt

Make the salad

1. In medium mixing bowl, add watermelon radishes, snap peas, avocado, green onion, and black-and-white sesame seeds.

Make the dressing

1. In small mixing bowl, add rice wine vinegar, sesame oil, ginger, agave, and sea salt.

2. Whisk until dressing is smooth and oil is well incorporated.

3. Drizzle dressing over salad.  Toss lightly to coat.  Serve immediately.

Note: Salad keeps in refrigerator up to 2 days in airtight container.

    Currently, my favorite vegan sweet is a Blackberry Raspberry Bar. Warm or cold, these are amazing. I’ve had so many friends really like these. This is the first recipe I have served to friends (non-vegans) and have been asked for the recipe. It has an oat-y bottom and a topping made from Blackberry jam and fresh raspberries. The recipe is from the Baker Creek Vegan Cookbook (from the Baker Creek Heirloom Seed people). I put the leftover bars in the freezer to slow myself down (!), but that doesn’t work. Yum,

    I found a new dessert that I’m hooked on right now!! I smash up some grahm crackers and melt earth balance into it, add a little cane sugar and bake for 5 minutes. I top with two scoops of a vegan ice cream called Nada Moo (vanilla) then top THAT with blueberry pie filling. Boom. Vegan cobbler. I’m from the south so I need my cobbler fix. Lol

    My favorite treat are these raw date caramel bars that I make several times a week.
    The crust is just:
    1/4C almonds
    1/4C coconut flakes
    3 dates
    I blend them till they are a sticky meal. Then I press them into 4 lined cupcake tins.

    The middle caramel layer is:
    7-8 dates
    1/2T coconut butter
    I blend that till smooth & layer over the crust.

    & the top is chocolate.
    I make my own by mixing melted cacao butter, raw cacao powder, & date syrup.
    I pour that on top of the 4 cupcakes & pop them in the freezer for about an hour!
    They are so yummy & only sweetened with dates!!

    Although most people wouldn’t consider it a treat, I’m really into steel cut oats right now. I lost my sense of taste and smell with a traumatic brain injury I sustained in February this year, and all I can distinguish now is sweet, salty, sour, and bitter. But with the oatmeal, I’ve found that stirring in a spoonful of peanut butter and a few spoonfuls of cocoa powder and a little organic sugar, I get a sweet/salty/nutty flavor like Reese’s cups or no-bake cookies, but much healthier! I consider it a treat because it feels like I’m being naughty and “indulging” but without all the guilt! :)

    I lurrrrrve your peanut butter cup recipe for a sweet treat but I usually substitute the peanut butter for sunflower seed butter!!! It’s a sun-butter cup instead!!!! There’s something so satisfying and “hearty” feeling about sunflower seed butter and it’s still very nutty– and actually, I also usually make them into balls as a smaller option– Kind Diet-inspired vegan sunbutter balls!! 😀

    My favorite is a peanut butter mousse that I adapted from your peanut butter pie recipe. I love this for guests because I can make it ahead or at the last minute, it requires no heat/baking, it is made of ingredients I usually have around the house, and it can look so fancy in a glass dish with a simple garnish.
    12.3 oz. box of firm silken tofu, lightly drained of excess water that was in the box (MUST be silken, no need to press the tofu)
    1 cup creamy peanut butter
    1/3 cup maple syrup (can add up to 1/2 cup, but start lower to adjust sweetness to your liking)
    1/2 tsp vanilla extract or 1/4 tsp vanilla bean paste
    Blend all ingredients in the blender until smooth.
    Put in a covered dish and refrigerate until serving. Spoon into individual dishes for serving.
    Garnish with a cookie, chocolate shavings, or a dusting of unsweetened cocoa powder. Sometimes I cut a shape out of a piece of paper based on the occasion (like a heart for valentines day) and hold it close to the mousse when I dust the cocoa powder over to get a special decoration.

    My two favs are a tossup between Isa Chandra Moskowitz’s “OOEY GOOEY BANANA CHOCOLATE FUDGE BROWNIES” that my husband made for my 30th birthday as part of a lovely 6 course meal. . . Let’s just say I went straight to the brownies… the vanilla banana topping on the chocolate brownie adds a really unique element… perfect when you’re jonesing for that num num but don’t know what you want.

    A few years ago I bought a raw cookbook and really enjoyed it so I have been looking for more recipes. This next recipe came with my Blentec blender’s cookbook. Not all recipes in it are vegan, but it’s easy to sub honey for agave which is what I did for the “RAW CINNABUNS”. The frosting is a lovely coconut vanilla cashew cream and the “bun” is made mostly of nuts, flaxseeds, dates, agave, vanilla and cinnamon. I recommend using TRUE cinnamon though. Since discovering the difference between true cinnamon and the ‘regular’, I can’t go back. True cinnamon is all the cinnamon goodness without the bitterness.

    It’s really simple, but this is a recipe I found on

    Strawberry “Cheesecak Bites


    1 lb. strawberries, destemmed
    8 oz. vegan cream cheese (try Daiya or Tofutti brands!)
    1 1/2 cups powdered sugar
    1 tsp. vanilla extract
    1/4 cup crushed animal crackers


    Carve a hollow spot in each strawberry for the “cheesecake.” Then, cut off a small portion of each strawberry tip so that the strawberries will stand upright.

    Combine the vegan cream cheese, powdered sugar, and vanilla extract and beat with an electric mixer until nice and fluffy.

    Pour the vegan cream cheese mixture into a pastry bag* and fill each strawberry.

    Place the animal crackers in a sandwich bag and crush gently into crumbs.

    Sprinkle the crumbs on top of the strawberries—and voilà!

    There are these zucchini brownies on Pintrest that was not vegan that I veganized. It is a thick, moist chocolate brownie with a layer of rich chocolate frosting on top. It reminds me of the brownie cakes I loved as a kid in the cafeteria before the food turned into a fast food line. Plus I feel a bit better that there are veggies in them. Also, I took the recipe with all all-purpose and halved it with whole wheat flour. Last, the butter that was included in the frosting I substituted coconut oil which gives it this glossy look and coconut flavor finish. Superb!!! It even tricks non-vegans.
