I have been craving the indulgent vodka tomato cream sauce that I have tried at restaurants. Well, I have lightened up this version, making it almost fat free and vegan.”I just love when people take recipes that they used to love, but change them to make the dishes healthier.   • of gnocchi 1 pound
  • olive oil 1 tbsp
  • parsley 2 tsp
  • hot red pepper flakes 0.5 tsp
  • minced garlic cloves 4 na
  • 28 ounce can of whole tomatoes 1 na
  • silken tofu 0.5 cup
  • of vodka 2 tbsp


  1. Put the gnocchi in a pot of water
  2. and bring to a boil.
  3. Boil for 3 minutes
  4. and then drain and set aside.

  5. Sauté the olive oil
  6. parsley
  7. red pepper flakes
  8. and garlic cloves in a medium saucepan.
  9. Add the can of whole tomatoes
  10. and bring to a boil.
  11. Puree this in a blender along with the silken tofu.
  12. Transfer back to the saucepan after blended.
Heat gently
  13. and add the vodka.

  14. Heat for one minute
  15. and then toss with the gnocchi.
