
I wanted to remind all of you about the Millet and Sweet Vegetable Porridge recipe in my book (page. 288). It's just so good, so healing, and a great breakfast dish! It's really good for you, especially during the colder months of the year, and is the perfect way to start off your day!
I want to encourage all of you who haven't tried this one yet to make it! It's such a healthy superhero breakfast dish... so nourishing, not to mention yummy! The best part about it is that it tastes just as good (if not better) when you eat it as leftovers a day later! I usually make one batch and it feeds me for 2-3 days in a row.
Personally, I prefer to make it with big chunks of Kabocha squash, almost inch wide cubes cause I like it when the squash is big and chunky (says bite-sized pieces in the book...oops!). But if you're not into chunky veggies, you can use smaller pieces of squash. Either way, it's delicious!
Millet and Sweet Vegetable Porridge
Serves 6-8
Ingredients

1 inch piece kombu
-
1 yellow onion, finely diced
-
2 stalks celery, finely diced

1 cup finely diced kabocha or butternut squash

1/2 cup yellow millet
-
2-3 teaspoons white miso
-
2-3 scallions, white and green parts, thinly sliced on the diagonal
Instructions

Layer the kombu, onion, celery, squash and millet in a soup pot

Genty add 5 cups of water to the pot, cover, and bring to a boil

Reduce the heat to low and simmer until the vegetables are tender and the millet is creamy (about 35 minutes)

Place the miso in a small bowl

Stir in a few tablespoons of the cooking liquid to dissolve it, and stir the miso back into the porridge

Simmer gently, uncovered, for 3-4 minutes to avoid destroying the miso's enzymes

Serve sprinkled with scallions
Enjoy!

This is great! Made a whole pot for lunch today and for breakfast tomorrow. Came back into the kitchen to find it completely gone! My boyfriend tried some and loved it so much that he finishend everything... Guess I need to make this more often... -

I hope you have been encourage by the kind encouragement you have received here thus far. I'm hoping you are able to receive food stamps to supplement your budget. Perhaps some rice and black beans and steamed greens could be an economical option? I wish you the best of luck on your journey. -

I LOVE, LOVE, LOVE the soft rice porridge from The Kind Diet. At one point I had to have it every day. It's the perfect blend of flavours. A note to those who haven't tried it yet - I tried substituting some ingredients a couple of times when I didn't have the ones called for on hand and it just wasn't the same. It's well worth it to have the ingredients listed in the recipe. Served with a green smoothie or steamed baby bok choy (with a little lemon juice, salt & pepper, and Earth Balance butter) is my ideal breakfast.

This is one of my favorite recipes. When I reheat I simply add a little more miso diluted in water to ensure I get all the benefits of the miso that may simply get overlooked during the reheating process.
Marilyn Holmes... You have quite a story and still some healing to do. Eating the best natural foods possible will help you start healing from inside. I try to eat mostly raw veggies and fill the hunger gap by adding lots of Hass avocados and nuts to my foods. This is by far the most economical way to be vegan. You have very good advice above, and I hope that you find this support as a resource to help you achieve your goals. Another helpful tip that has worked for me is daily meditation and prayer to help you open yourself to all the beautiful things that surround you. -

It is absolutely devastating when the person you were in love with stops spending time with you. But, it has been six years since he made the mistake of not enjoying your company anymore. You are as wonderful person now as you were when your husband fell in love with you. I hope you will open your heart to new people and let them see the wonderful person that you still are. Try joining a church, club like the Red Hat Club or a book club, or take a class at a community center or college. If you are a senior, sometimes college classes are free. People are going to just love you! We are each special in our own way, which makes us unique. The government has grants for education, so classes at college will probaby be free for you.
About Alicia Silverstone, some people who reviewed her cookbook said she probably didn't write the book. I don't believe that. I have read the entire book and it has the heart of a lady from a big city (or two) who found a more healthful way to eat. She has slightly exotic taste, but that makes me learn more about how other cultures eat healthfully.
Good luck finding a group of new friends that have time for you. You are already making positive changes in your life by finding a more healthful diet. You are loved by the world. :-)

hi Marilyn Holmes...I'm glad you have become a vegetarian...I was a vegetarian for years...now, I have gone vegan...it is best to try to eat unprocessed, simple and plain food as this is the most inexpensive way to eat...you will get used to this way of eating and your taste buds will become accustomed to this food...I can assure you that Alicia is for real...she is a very honest, giving, earth loving person...and I appreciate that she has put up this kind life site so we can share our vegan ways of living...

I live in the middle of nowhere inthe NC high country! Been here for almost 5 years. Iwas bornand raised in NJ- where there is civilization!Husband dumped me 6 years ago, for his brother's wife. Have been in poverty and hellevery since! While he and and his girlfriend live great, take wonderful vacations etc. She will not let me talk to him. We are still married. I became a vegetarian over 3 years ago- have become much more healthy! Had A heart attack when I was 48. Have a stent- but the last 2 years, My cholesterol has been under 100. Yea!! There is no avaiability ofmuchhe healthy food down here. It is a very poor area. I live on ondisability and I am 75percent blind. Can you try to give people like me a more inexpensiveway to goveg or as I am working toward,vegan. I live alone, and want to be healthy and do my part!! Please helpme.Are you really there Alicia? Or is this just a come on?I don't get it. I just got a puter from my daughteron Christmas. Haven't been on line since the hubby of 20 years left me. Can you advise? This will determine whether or not I can hang!!

Once you start doing veggies in the morning you will never go back! Except on my bike to work mornings me and the wife now site down to nice hearty healthy breakfast. We usually do the other recipe for reheating rice into porridge and throw in a side of kale with ume vinegar or maybe a bowl of miso too and a feel great. Not to mention spending some extra time with the wife in the morning is a bonus!

Besides anything oatmeal (steel cut oats) being delicious with some agave and almond milk mixed in, one of my favorite breakfast dishes of all time that I recently converted to vegan is cornbread. Not just any cornbread, but organic vegan cornbread. I stick a nice big chunk into a bowl and break it up into pieces and toss on a small bit of vegan butter. Then I pour in some organic almond milk and finally top it with organic blackstrap molasses. Mmm.
I have yet to try your recipe, which sounds delicous, and may be on our menu tomorrow morning!
