My Sweetheart's Favorite Alfredo

Going out to dinner can be sweet and romantic, but honestly, to really connect with and appreciate my Sweetheart, I prefer a home-cooked meal eaten in the quiet and privacy of our own dining room. And just because it's homemade doesn't mean you have to sacrifice the elegance and decadence of restaurant fare.
Fettuccine alfredo was an oft-requested dish when my husband was a kid. Since becoming vegan many years ago, he'd given up on his old stand-by. As he is ever the pasta fan, I developed my vegan version of creamy Alfredo sauce as an expression of my adoration for David. This is a relatively simple recipe that doesn't require hours in the kitchen and it still uses whole-foods ingredients. So, spend some quality time with your Love this Valentine's Day, and then impress him or her with your awesome sauce!

My Sweetheart’s Favorite Alfredo
Serves 4
Ingredients:
1 cup raw cashews
2 tablespoons raw pine nuts
1 1/2 cups water
4 teaspoons fresh lemon juice
1 teaspoon minced garlic
1/16 teaspoon ground nutmeg
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper, plus more to taste
4 cups cooked fettuccine (or other pasta of your choice)
3 tablespoons freshly minced parsley
Directions:
1. In a blender, grind cashews and pine nuts into a fine powder. Add water, lemon juice, garlic, nutmeg, and salt. Blend until completely smooth.
2. Transfer sauce to a small saucepan over medium heat and whisk as you bring to a boil. Reduce heat to low and simmer for 7 minutes, whisking regularly. Stir in black pepper.
3. Serve over hot pasta and garnish with parsley and fresh ground pepper to taste.

As for the vegan chocolates *GASP* I would just die to try... the Artisan Vegan Truffles! Coconut Joy Truffles... my gosh. I haven't had chocolate truffles in so long since they literally don't exist out in the South unless you make them yourself. Sad.

yes, today there are an abundance of yummy vegan treats available, and for that we should feel quite lucky. one of my personal favorites is allison's gourmet (and allison rivers samson one of the many people that I am so glad is out there). here's why: not only do allison and team create absolutely decadent confections, but she does so with integrity at the basis of the business model. not only is everything vegan [down to the non bone char sugar], there is also a priority on
quality,
fair trade chocolate,
organic ingredients and
the absence of 'unpronounceables' or unnecessary ingredients that one (well, I) would feel iffy about putting into my body. [which companies often add into products to lower production costs].
allison's gourmet is one of the many vegan companies that an ethical vegan sighs a sigh of relief when learning about, knowing that they are in business for the right reasons, and use their platform to support responsible suppliers and growers.
now when one is lost in some yummy vegan chipotle cinnamon fudge or peppermint cream paddies, it is quite easy to forget why vegan. for the animals. the whole point of going vegan and staying vegan is to end animal exploitation in all ways, and to enlighten others as well. that is the number one reason why I get excited about great vegan companies, restaurants, literature... because of the potential to save countless individuals from lifelong suffering. I absolutely love the food as activism approach, and think that allison has flown with the caliber of these products (and is flying in great company, as we see more and more innovative individuals in the movement).
this is my go to toe-in-the door conversation starter for non-vegans. once they know how superb the vegan options out there are, then you hear those wonderful words that go something like "this is vegan? you know, I could do this." but not always. we can't give every non vegan in our lives a vaute couture coat or a pair of olsen haus or goodguys shoes, we can't always encourage them to read an animal rights/veganism themed book or to watch an undercover video; but as often as we can, we can give chocolate to strangers [with a little note about the30dayveganchallenge.com/ or something of that sort] or really just tell people about it. and who knows where that could lead? whenever I need to gift give, I do allison's gourmet. [ because when there really is no other way to reach an elderly relative who may be so set in the ways of the old country and shows their affection by cooking a dead animal, give them a box of vegan chocolate. the next thing you know, they might just let you veganize their traditional old family recipes, and tell you stories about their long forgotten childhood affection towards animals. ]
anyway.
as many times as I've gifted these chocolates, though, I've never tried them myself. the artisan vegan truffles seem vissions-of-surgar-plums worthy. but I don't know if I have the restraint to not give them away if I did get myself a box, I would probably end up giving that away too.

I want to try the cinnamon chipotle fudge and the vanilla kissed strawberry bark! It's so rare for me to find delicious treats that I can eat due to my numerous food allergies, but these two decadent chocolate confections contain ingredients I can eat ^_^ -

Oh my, who doesn't love a truffle....if I have to decide I will go with the Orange Blossom Truffle! I will try desperately hard to share with my children...but no promises. -
I have been missing out on caramels since going vegan!!! Everything looks amazing, but that is what I would have to choose first (and then of course, everything else!!) -
ohhhhhh so many too choose from... I think the Peanut Butter Cups and the Artisan Vegan Truffles stand out to me... am now off to drool some more at the amazing selection :p -
Honestly it might not seem romantic but the salted chocolate brittle looks awesome. I didn't know you could do that vegan!!! Pretty cool:)
