Anywho, to address the cheese dilemma, I’m gonna hit you guys with some of the best-looking homemade vegan cheese recipes on the web. The first recipe is this yum-looking vegan goat cheese from C’est La Vegan. If you’ve tried it, let me know. And Enjoy!
Pepper-Crusted Cashew Goat Cheese (adapted from Vegetarian Times)
Makes 10 ounce log
• 3/4 cup raw cashews
• 1/4 cup canola oil
• 1/4 cup lemon juice
• 1 1/4 teaspoons salt
• 2 tablespoons water
• 1 teaspoon cracked black peppercorns or coarsely ground black pepper

I keep a jar of my Spicy Cashew Cheese Spread on hand at all times. It's great on crackers or bread, in sandwiches and wraps, on pizza, and in casseroles. It has a sort of cheddary flavor. This stuff is AWESOME. Created an account here, specifically so I could say that...because I didn't see much else in praise or denouncement of above recipe.
Have been vegan (in Alaska, figure that out) for 5+ years. Made this recipe with a food processor (not as good as a Vitamix, but it'll do) and an oven, first time out.
If you follow the recipe to the letter, you will have an awesome cheese that even confirmed omnivores will want more of. Served this up to my cheddar/feta-loving step-dad, and he ate (more or less) half the entire thing. -

Okay, you want some REALLY GOOD Vegan cheese, yes, an oxymoron so it seems, but there is this GREAT book out there "Artisan Vegan Cheeses" by a Chef's name whom I do not remember. She is a Japanese Chef... I made the Soft "Gruyere" this past week. O.M.G.!!!!! I even gave it to employees at work to try.... they were duly impressed, and these are non-vegan individuals. So... I would suggest trying this book she has several recipes, uses very little lemon juice in anything and very little oils in most. Give it a whirl! -
I haven't found a vegan cheese I like. They taste so fake. This one sounds good. It seems like you post a ton of recipes you have never tried. I think you should try more of them before you post them. A lot of vegan recipes call for a lot of ingredients, sometimes expensive, and look good but when you spend all the time and money making them they taste aweful. -
I made this recipe in the past, used olive oil, and less of it. It was very good. The lemon gives it a tanginess that is present in goat cheese. I rolle some in herbs and some in peppercorns. You have to plan ahead though because the cashew require an overnight soak. -
Please use some other oil besides canola, such as light olive, or grapeseed. Canola is an engineered product (stands for CAnadian Oil Low Acid). Good quality dairy free product that taste very realistic. Depending on the day a little to much like the real thing for me, see Havarti. -

I tried this recipe when it appeared in Vegetarian Times Magazine. It was just ok--didn't really rock my world. I'm still searching for a recipe that can satisfy my cheese cravings. -
PS...fondue is fondue. Can't change that name!! The French would never speak to us. It'd be worse than French fries. LOL!!! I'm all about trying a vegan brie!! I used to love when my mom would bake a wheel of it with brown sugar and pecans on top for dinner parties (back in the late 70's-early 80's). -
@Rae: YUM on the ravioli suggestion!! And the nutritional yeast makes sense - have you tried it for vegan goat cheese?
@Rew - very nice point. I agree with what your saying and never thought of it that way, but the great thing about calling it "vegan goat cheese" is it alerts non-vegans & "flirts" to the substitute options available. As a matter if fact, goat cheese is one thing I still have in my fridge...I've been wondering about it...so this totally caught my eye!! -

i gets confused with why it has to be called 'cheese' at all.. when one chooses to be vegan it's suppose to be cause it's what you want to do ... why 'make believe' these yummy foods are just copies of what we choose to no longer digest.. this recipe sounds soooo yummy can't it just be 'cashew heaven' or something like that? it's so kooky to me to make 'imitation cheese'... that's just me... & yes i LuV cheese.. but i LuV vegan more... ;) xXx but what about next .. making VeGaN FoNdue.... ;) -
I've made vegan cashew cheese many times. The only ingredient I use that is not listed in this is Nutritional Yeast. I've also never seen this recipe require a cheese cloth. I think of it as more of a cross between a ricotta and a goat cheese. Many vegan restaurants use Cashew Cheese as a Ravioli filling. -
