If you’re looking for an easy, delicious snack that travels well, try mochi. It’s so great, and you can make it quickly at home. It’s Bear’s favorite food! You can find it at Whole Foods and other health food stores in a package and follow the recipe in my book (pg. 237). It takes one or two minutes to prep and you can walk away and do something while it cooks…so easy! Then, you can take it in the car or train or just eat it from the pan!
Lately I’ve been doing this savory version….
Pan-Fried Mochi (a twist on The Kind Diet’s version)
Ingredients:
1 package unflavored mochi, cut into 1” x 2” rectangles
¼ sheet nori per serving
1 Tbsp. Sesame Oil
1 Splash soy sauce
Instructions:
1. Cut into small pieces, as in the picture above. Toss the mochi into a pan with a little sesame oil on super low heat. Cover it.
2. After a few minutes, 3-4, or as soon as it looks like it’s starting to puff up, turn it over and add a tiny splash of shoyu and water. I use about three drops per piece of mochi and add to some water – just a little – and then I put that on top of each piece. Cover again for 2-3 minutes, checking to make sure it doesn’t burn. Look for it to get puffy, then when it’s puffed, take it off the stove.
3. Wrap it in nori…delicious!
I can just grab this and run out the door. It’s my version of a pop tart! It makes a great snack on the go.
